Our Pinot Gris has beautiful aromas of pear and citrus with hints of wildflowers. There are flavors of several fresh fruits, especially red apples and peaches with hints of honey and tangerine peel. This is a wine made to handle spicy foods as it is known to help cut the heat from the hottest peppers. It also goes well with salmon, pork and cheese.

Lovely honey-suckle and white pear aromas along with some tropical melon and mandarins skin notes.

Winemaker Notes
All fermented in Stainless Steel tank using just the slow active VL3 yeasts for temperature control and to maximize the elegant aroma profile. About midway through fermentation, the wine was then racked off it's yeast lees, those lees sediment collected, aerated and then added back to the top of the wine, thus speeding up the yeast ortolicusis and adding a richer overall mouthfeel texture and viscosity.
